I have used many different slicers (V-type, diagonal) and this stainless steel Bron which I also own is my favorite by far. The Borner V slicer I own does not have legs and is thus unstable, it is okay for quick non-uniform shredding and slicing. This model has it's own legs so your two hands can focus on the cutting. If you simply pay attention to where the blades are (put the cell phone down), you shouldn't cut yourself. It has a sliding guard for the food to rest in which attaches to the mandoline (which in the picture of the item is shown attached upside-down) and I believe to be safer than the free floating guards of the others. One plus of the steel construction is absolutely true uniform slices which are produced, which has not been experienced with plastic slicers. If you have the money, it is a great investment that should last you your lifetime.

I really think Hoffritz is missing the boat by not selling this slicer in an infomercial. This is one kitchen gadget that really works. One feature that sets it apart is the stainless steel bowl that the slicer portion sits on. It is high quality and nearly worth the price of the slicer by itself. The rubber feet on the bottom of the bowl are effective in their designed use to prevent the bowl from wandering on the countertop as one uses the slicer on top of it. A feature that the Amazon description did not mention is the rack which holds all the blades, protecting both one's fingers and the blades. I get perfectly uniform slices of carrots and zuchini and potatoes with ease and the food holder even rides on a pair of rails on top so it can not slip off. A surprising aspect of using this slicer is that it actually makes food go further because once you see the pile of slices you can get from , for example, just one carrot , you may decide you don't want to use two. If you do slice more than you need which is easy to do because it is almost fun, the handy plastic cover snaps onto the bowl and will protect the contents well in the fridge. Hoffritz has been reknowned for fine quality blades for many years and the slicer is blessed with durable and sharp ones. Most of all this thing just oozes quality and is very satisfying and efficient to use. Factor in the time savings and how easy it is to clean , just a quick rinse usually does it although the whole thing is diswasher safe and you have great addition to any kitchen.

I've had this mandoline about 4 months after reading the recommendation of a Washington Post writer. It has worked well enough, but I sometimes wonder if the Boerner V-slicer would have been a better purchase. The blade is *not* that sharp, although it does a good enough job on potatoes, my main use for it. It is easy to clean and the blades are all right there when you need them, but I have one big gripe. The holder/pusher seems to "grasp" a lot of whatever you are cutting, leaving huge chunks of leftover potato, cucumber, carrot or whatever. My objective is not to throw away 15-20% of my vegetables.
Addition to review: returned said mandoline and replaced with Boerner V-slicer. No comparison! The V-slicer is sharper, easy to use, and doesn't waste large chunks of vegetable. It Sliced cukes and tomatoes with ease!

First of all poor directions came with it and other than just slicing up a straight cut on a potatoe, nothing else really works. Grating anything is messy and wastes more of the vegtable than grates it. I went back to my manual hand held grater quicker and easier.

Well, I'm shocked that there are ANY positive reviews for this gadget. If ANYBODY is the "gadget queen" in the kitchen, it's me. I own and have used the Boerner V-slicer for at least 15 years and love it, but sometimes when you just have a small, quick job to do, I thought this might qualify - so I went and bought one. I think it's terrible! First of all, the finger protector is almost unusable. The points on the underside meant to grab and hold onto the food are so shallow that they don't want to penetrate the piece of vegetable or fruit or maintain its grip on it more than one swipe across the cutter. So, I resorted to just holding the apple quarters, in this case, with my hand with plans to just not slice the last little chunk of each piece when I was getting too close to the blade. The adjusting of the cutting thickness is already a big pain as the little control/slider wants to stick at each junction, making it difficult to change the thicknesses. When sliding the apple in the downward motion, it made perfect and uniform slices. But, when you are sliding it back up (the hand motion is usually rapidly sliding the pieces of food down and then back up across the blade) - well, the food tends to sort of get caught in the returning motion on the far end of the blade. There's a little ridge or separation bet. the blade and the support so it catches the food on the upward motion, frequently "yanking" it out of your hand. This causes the food to drop away and creates a potentially dangerous environment as your hand is normally moving back & forth fast so that you could end up slicing your fingers on the way back down again across the blade before you even realize that the food fell away from your hand. Is that understandable?? Sorry, it's just dangerous and because of it's poor design, it encourages people to not use the finger protector which is an accident waiting to happen. I'm returning mine.

First, the Norpro is %100 compatible with the Bron, including the Bron's replacement blades (available in a wide variety of sizes, though not at amazon--yet).
Safety: First, if you haven't put in at least a hundred hours on a mandoline, be sure to use protection. No, not that ...worthless/dangerous pusher. Use a butcher's glove (or "oyster glove"), preferably a chain mail one. You could get by with significantly more affordable Kevlar or "Fibers Woven with Stainless Steel Threading" ones, but you will be more prone to bruising and nicks. Second, keep your eye on the blade, not on the vegetable. Third, use smooth, swift strokes applying as much pressure toward the mandoline's face as you do on the stroke itself. Last, and most importantly- don't rush! Take your time, maintain your focus, zone out that burning smell coming from the oven.
The mandoline produces narrow shallow decorative crinkles. While waffle cut vegetables are quite possible with this sturdy industry standard, it takes a lot of adjusting and they come out thin without good definition of holes. For a better waffle cut consider a stand alone crinkle cutter. The washboard style ones typically aren't adjustable, so I'd recommend a hand held crinkle blade (look for deeper/wider scallops).
To produce uniform slices, you can either move the julienne blades to neutral or remove the blades completely. The first method often produces slices with nicks on them from where the slices catch on the hanging julienne blades. The second method is time consuming and may lead to eventually stripping out the nuts (so be careful not to over tighten).
This is a time saving and indispensable tool once you get accustomed to it. It could use more documentation.

This thing is great! I've tried several mandolines--from the top-of-the-line unit to an inexpensive, but highly rated V-slicer, and another handheld. I sent the former back, gave the V-slicer away and the handheld broke. None of them served my purpose. All the blade changing and/or adjusting with the stationary mandolines was awkward and a lot of trouble considering I wasn't cooking for a restaurant--I just wanted to make salads for one or two, or a variety of other things, but usually in rather small quantities. This slicer is perfect. Now I can slice a leek, a carrot and part of a cucumber directly onto my salad in seconds. I can slice beets or other veggies very quickly and conveniently directly into the pot. The large knob on the bottom of this unit turns easily to create the desired slice thickness and a quick swish and rinse leaves it clean for the next time. I get high-end mandoline quality slices from the super sharp blade, but without all the set up and clean up time. This unit is sturdy and reliable. I couldn't be happier with my purchase. Between this and my Alligator dicer, my fruit and vegetable ingredients look professionally prepared and are done in a flash.
Update 9/5/09
This useful tool has been great for helping process summer bounty, most especially with getting the kernels off corncobs so they can be frozen. I've tried other products for that, but they are not satisfactory, where this tool allows me to run the cob down against the blade and in a few passes, all the kernels are in the bowl. I can do several ears in only a few minutes. I use one of those 'Kevlar' gloves to make sure I don't cut myself and it works great. Microplane 34007 Cut Resistant Glove

The slicer does a good job on making waffle cut potatoes, which is what I wanted, but the safety holder (shown in the photo of the item) is not included, and there is no warning that this must be bought separately. The first instruction is "Alway use safety holder," which is a good instruction, and therefore the buyer should be warned ahead of time that it is not included - or else the holder should not appear in the picture of the product.
The potato goes into the slicer fairly easily to start, but it is rather difficult to get it to go all the way through for a complete slice. Perhaps if I had the safety holder, slicing would be easier. If you have another mandoline that uses the same safety holder, then you probably would not need to buy one, but unfortunately this was not the case for me.

This grater is very effective. The variety of grates is very useful, however, there isn't really one that we like for grating the cheese for the nachos. There are a few things I don't like about it. It is very sharp, which, of course, is a desirable characteristic. But you must be careful with it. While I was rinsing off the inside of it after its first use, I took a big slice out of my finger. I have since learned to use a long handled brush for this purpose. The "holder" that comes with it is not very convenient to use. It will not hold what you are slicing very effectively. I tried to slice a tomato with the grater and all it did was peel the tomato. It is really a rather large piece of equipment. I had to rearrange my limited cabinet space to find a convenient place to store it. This characteristic I should have anticipated before I purchased it. I just point it out so that you will keep it in mind before you purchase it. All-in-all I will probably save this device for the "big" jobs and go back to using the regular old grater for the nacho cheese.

I bought this mandoline to replace a ten-year-old Boerner V-slicer which I though was getting a little dull and now I'm glad I didn't throw the old one away. I use a mandoline to get consistently thin, thin slices, and the Zyliss doesn't get the job done. Cutting with the .75-mm insert yields slices that vary between paper-thin and 1/16 of an inch thick -- a very long way from .75mm. I suspect the plastic used in the frame and insert is just too flexible or too poorly supported to provide thin slices every time.
In addition the rail-guide system is cumbersome and makes it very difficult to position food for slicing.
In short, for me, this product was a waste of money and the only product I've ever ordered from Amazon that I wish I could send back.
Buy a Boerner V-slicer instead: its a better slicer and it costs...less!

I received this as a Christmas gift --one of the best I've ever enjoyed! It is easier, faster and less hassle than my food processor. The first day I got it I used it to slice potatoes for scalloped potatoes and oh my gosh how easy. I find I grab it and go to much more than my electric gadgets (and I admit, I love gadgets...) It's a necessity for what I need lots of--onions (is there a good recipe that does not include onions???) peppers, tomatoes, apples, fennel, etc....it's a wonder on hard fruits and veggies. The clean up is quick, the hand-guard/pusher is easy and actually works, (I've even used this thing with celery!) and the attachments fit and store very well in the rack that's included. (And very safely)
My only complaint is that the plastic seems to stain with carrot or tomato. In the big scheme of things....no biggie.
I love this thing!

I bought this one as a gift for my daughter. I have owned this unit for many years, and even though I have a Cuisinart food processor, this is so much faster to use and easier to clean up. I like the uniformity of slices, shredding, etc., because it makes my prepared dishes look so professional! It's also compact and easy to store, and when we traveled in the winters, this always went with us in the motorhome. Excellent product and still performing perfectly after many years. I have spent quite a bit of time with mandolines in professional kitchens so I might be a bit biased but this was very poor quality and not sharp enough to effectively slice anything. The blade can't even be removed for sharpening. I spent 5 bucks more and bought an oneida mandoline which still isn't restaurant quality but it's a lot better than this. This product is just a waste of money.

We purchased this mandoline after it "won" the top spot on America's Test Kitchen's product reviews, over products that were much more expensive. America's Test Kitchen was considering safety features, as well as good slicing and convenience. It does have great safety features (which is a good thing, because those blades are SHARP!!!) And it works as well at slicing ripe tomatoes (which many mandolines mangle) as it does at slicing onions or potatoes. Great product, and yet another example of Oxo's great product design!

The very versatile OXO Good Grips V-Blade Mandoline slices fruits and vegetables with ease.
