They told me that even the best restaurants uses Benriner Slicer. I bought one. Amazing abilities and precision steel work. You can take the cutting knife out and re-sharpen it (only with Japanese whet stone please). It may last forever.
They have several sizes. Don't the narrow one only the wide. The narrow one must be much less confortable (and may danger your fingers).
