This knife is very sharp and holds an edge extremely well with little effort. The thin blade makes cutting hard and soft vegetables a breeze - even tomatoes and potatoes. The shape of the blade also makes it easy to scoop the vegetables up so you can move it to the bowl or plate or pan - and it holds a lot.
I am very pleased with this knife and plan on buying the special sharpener that goes with it, as I expect to use this frequently.
