As Wusthof official statements put it, the Ikon Blackwood is the jewel of Wusthof. It is the most expensive line of all Wusthof cutlery lines.
In short summary,
Pros: Decent stainless steel grade, excellent reduced bolster design, excellent ergonomic handle, good weight, beautiful wood handle, an overall attractive knife
Cons: High cost (when not on sale), the knife balance may shift too much to the handle for a paring knife.
The Classic Ikon series and the Ikon Blackwood series are essentially the same, except for the handle, where the Classic Ikon handles are made with hard plastic and Ikon Blackwood handles are made from African Blackwood (Grenadill wood). Currently, the Ikon Blackwood paring knife is being sold at $80 and the Classic paring knife is $60. Both are forged knives made with a good quality steel blade, an ergonomic handle, a full tang, a reduced (heel-less) front bolster and an additional bolster at the end of the handle butt. Despite the marketing statements claiming it is a high carbon stainless steel knife, it isn't. X50CrMoV15 is the stainless steel grade here, so it has 0.5% carbon and that is not considered high by today standard. In contrast, VG-10 (used in Shun Classic knives and Tojiro knives) has 0.95%-1.0% carbon and SG-2 (used in Shun Elite) has 1.25-1.45% carbon. Nevertheless, X50CrMoV15 makes a tough knife with good corrosion resistant. In other words, the edge rolls easily compared to most Japanese knives, but this steel has good resistance against chipping and rusting.
What I really appreciate about the Ikon line is its reduced bolster. The traditional full bolster which extends the entire knife heel makes sharpening difficult. Ikon solves this problem nicely by reducing the bolster. The knife edge is fairly sharp out-of-the-box compared to other knives, but it could have taken a much better edge. I sharpened it on diamond stone and then on Japanese water stones. I can vouch from my experience that the reduced bolster has made the knife much easier to sharpen. The ergonomic handle is truly ergonomic as it claims. It fits my hand nicely. The second bolster on the back of the handle shifts the center of gravity significantly toward the handle. It probably works better for larger knives, like a Chef's knife, but for a small blade paring knife, I feel it may have shifted the weight slightly much toward the handle. Still, it is not too bad and I can certainly adapt to. The African blackwood is indeed as nice Wusthof claims. It is very beautiful, smooth to touch and best of all: it really does not absorb much water. I bought this knife at $50 and am quiet happy with it. At $80-$125, which is the usual price range for this knife, I think it is high.

This is a variation of my review of the J.A. Henckels International Forged Synergy 13-Piece Knife Set. But this 16-piece set is the one I'd recommend, so here goes... My wife and I have been using the Forged Synergy knives for about 2 years, and we couldn't be happier with them. They are well made, well-balanced, have beautiful handles, a nice finish, and hold a very sharp edge--we've sliced tomatoes with all of them. If you're buying your first set of fine knives, these WILL hold up to the Henckels reputation for quality.
Now regarding what some others have said about rusting and quality, I'll just add my two cents. There is a "Forged Synergy" and a "Fine Edge Synergy" series, and the main kitchen knives in those sets are NOT the same (though the steak knives appear to be so). The forged series has a metal tine that runs all the way through the handle with the black grips riveted on. The J.A. Henckels International Fine Edge Synergy 13-Piece Block Set is totally different--see the Amazon photos and descriptions for yourself. Yes, this Forged Synergy set is also made in China (not Spain or Germany like some of the more expensive Henckels sets that are 2 to 5 times more expensive), but the quality is still excellent and should far surpass most users' expectations.
Regarding rust spots, we've had none. However, there are two main types of stainless steel: one is harder and slightly less stain resistant; the other is more stain resistant but slightly softer. That means that you give up a little stain resistance to have a knife that holds a sharper edge longer. I think that's much more important than having to clean an occasional rust spot off if it were to occur. And usually, rust spots come from cheap kitchen gadgets whose rust sticks to the stainless--not that the stainless itself is rusting.
There are only two minor faults I find with this set (that didn't stop me from buying it, however). The kitchen shears are excellent quality and cut great, but the two parts should be easily separable for cleaning purposes. You'll see this in newer shear designs, and it's not a feature that would add to the cost. Also, the black finished knife block will eventually show wear and tear from missing when inserting knives into the slots. I'd have prefered a standard maple block. Lastly, for a few dollars more, I recommend the 16-piece version of this set over the 13-piece set because you get three more knives for about the price of one more.

This knife is good for everything from mincing herbs to slicing fruit to filleting small fish - it even makes a pretty good steak knife. I finally broke down and bought a second one, so my mate and I can cook together without fighting over it.
Like all the knives in the Wusthof Classic line, this knife is fully tanged and bolstered. The tang extends into the handle and offsets the weight of the blade, and the bolster sits on your index finger to provide the fulcrum point. The result is a knife that is remarkably responsive and balanced. Some reviewers prefer the larger utility knife to this 3.5 inch parer. This knife is lighter and shorter, and therefore provides a balance point that is more comfortable for a smaller hand.
If you want the full arsenal of Wusthof prep knives, get the bird's-beak parer for digging the eyes out of potatoes and the stems out of peppers, get the serrated utility knife for slicing citrus and tomatoes, get the trimming knife for cutting off stems and boo-boos, and get the utility or boning knife for for slicing and meat prep. But if you just want to buy one, get this one.

This is our favorite knife. If you have a cleaver and a paring knife, you don't really need anything else. We bought one for each of our kids when they moved out of our house. It is wonderful for chopping and slicing and the size of the blade makes it easy to transfer minced vegetables from the cutting board to the pan. Our Wusthof knives have lasted for years and I expect the cleavers will still be used daily 25 years from now.

This is really great for things like celery, green onions and other items that can be tricky to cut completely through. I have not used it for herbs yet but think that it would be even better for that. If nothing else, it breaks up the monotony of chopping a bit.

This Vegetable Knife is just what one needs for finely chopping up all types of vegetables. You must be careful though, it is VERY SHARP!! Must use the correct method of holding your hand on the vegetables BEHIND THE KNIFE so as not to get it in the way while chopping. Will make razor-thin slices of just about any vegetable. Great product. Highly recommended!!
