If you're starting out, going off to college, equipping a cabin or an RV, looking for knives to use when tailgaiting or camping, etc., these are great. An added bonus is that you'll have the experience to help you decide which of the shapes best suits your preference.
While they aren't professional quality, they're good value for the money. They have a range of blade shapes, making them a versatile set. Their color coding can be useful, too.
WASH promptly after use in hot soap and water, rather than put them in the dishwasher. They'll last longer and stay sharp longer, too. (They'll also set you up with good habits for when you do get the full tang forged versions by Henkel.)

Shun DM0715 Classic 2-1/2-Inch Bird's Beak Knife Review

(More customer reviews)I have a lot of experience using various brands of kitchen cutlery, including some from relatively obscure Japanese manufacturers, and I truly believe that this is the best bird's beak knife on the market. The most important thing in selecting a bird's beak knife is sharpness, and Shun knives are certainly among the very sharpest on the market today. The only comparable knife that I have used is the Global bird's beak knife, but this one has a much more comfortable handle than the Global does. Additionally, the Shun bird's beak knife is balanced better than the Global, and significantly sharper than similar knives from Wusthof and Henckels. There is also a Shun Stainless bird's beak knife, with the only difference being the stainless steel handle. Although not every kitchen absolutely needs a bird's beak knife, I highly recommend this one for those that do want one for peeling tough vegetables such as turnips and for specialized decorative garnishing.

Global GS-14 6-Inch 15 cm Serrated Utility, Scallop Knife Review

(More customer reviews)I bought this knife along with a few other Global knives and ended up returning it. This is not to say that this is a bad knife but I found that it was unnecessary alongside the rest of the Global knives I purchased. The non-serrated knifes are so sharp that there were practicaly no instances where I needed to use this knife. I did end-up keeping the 8" serrated bread knife but as long as you have that one, you don't really need another serrated knives.
I like being able to sharpen my knives frequently and this isn't very easy to do with serrated knives. A special tool and technique is required and the whole process is very time consuming. In addition, make sure that you use a ceramic sharpener on all global knives. Its supposed to have a different grit that is better for them. Kyocera (ceramic knife manufacturer) makes one specifically for Global but they are quite expensive.

Henckels Twin Four Star 3-Inch High Carbon Stainless Steel Paring Knife. This set is good quality. Stamped on the blades are the words "German Stainless Steel" and "Made in China". They have a good sharp edge and a textured, shaped plastic handle that provides a good grip. The package says that the knives are "stamped one-piece blade construction for strength and durability". It also says that the handles are "fully closed polypropylene", "breakproof, dishwasher safe, and hygienic." They are lightweight and have a nice finish on the blades.

(More customer reviews)We purchased a Henckels Four-Star set about ten (10) years ago and use it daily. Out of the set of six or seven knives, this utility knife is our most frequently used. It is extremely useful in food preparation, holds an edge longer than the other non-serrated knives, and isn't affected by dish-washer abuse.
This is a great product that will last you many years. One caveat: NEVER allow your MOTHER-IN-LAW to borrow it and use it as a screwdriver. It will be ruined - hence my purchase of a second one of these knives.

Shun DM0700 Classic 3-1/2-Inch Paring Knife Review

(More customer reviews)Let me first say that the Shun knives, including the 3 1/2 in paring knife, are fantastic. They are the sharpest kitchen knives around and hold an edge very well. The craftsmanship and quality are also extremely good.
However, a $45 paring knife does not make sense unless price is no object for you. You can get a Forschner 3 1/2 inch paring knife (rated number 1 by Cook's Illustrated) for $4.95, a tenth of the cost of this knife. As an owner of both knives, I can say that the Forschner is almost as sharp as the Shun and more comfortable to hold. Certainly the Shun is not 10 times as better as the Forschner.
It should also be noted that the prices on all the Shun knives have gone up after Alton Brown started promoting them. This paring knife was $30 a year ago when I bought it.
In summary, if price is no object for you and you want the best paring knife you can get, buy this knife. Otherwise, I would think twice before making this purchase.

Although it's lighter and stays sharper than my Henkels, it takes some getting used to. I've seriously cut myself twice with it. Rada blades are fairly flexible, so they seem to be better for smaller knives than these larger ones. I still use this knife, but it's not really strong enough to be a serious chef's knife.

J.A. Henckels International 3-Piece Paring Knife Set, Multicolored Review

(More customer reviews)Several years ago I bought the 4-pack set of these knives, manufactured by Zwilling-Henckels. I was so happy with them I bought some for others in my family. We use them almost daily, so I wanted to get another set. While looking around on the site, I noticed this 3-piece set which cost 1/2 as much as the 4-piece! What a deal I thought! The only knife missing was the red-handled one, which I use the least anyway. Unfortunately, I forgot to do my homework. Yes, these ARE Henckels knives but NOT the same Henckels knives I have and love. Henckels has two lines, the "premium" brand and the "value for the money" brand. The first set of knives I bought was the "premium" brand and this set from Henckels, International, is the "value for the money" brand. These knives are very similar to the first set I bought but they are not the same. The handles are slightly different, the blades are different sizes, the knives aren't as sharp, and I have already noticed some small rust stains on the blades, though I was able to scrub them off. These knives are ok for the price, but they aren't as good as the set from Zwilling-Henckels, which I would have given 5 stars.
09/14/09 Here it is, 5 years later, and I'm thinking of buying another set of Henckels paring knives. I will buy the Henckels Twingrip set of 4 rather than these, in spite of the higher price. (If you knew me, that fact would astound you!) If you are confused by the similar names for the two sets of knives, see if you can find a close-up picture. The better quality knives have two little 'men' on the blade, as opposed to one 'man' on the lower quality merchandise.
If you are wondering why I would consider buying yet another set of paring knives, it is for this reason: I find myself washing the dirty, yellow H. Twingrip knife over and over rather than reaching for my clean, yellow H. International blade!

Until now, a couple of those German knives were among my favorite kitchen tools. However, last week I sliced up some mangoes, bananas, and limes with this little Shun paring knife, and I have already given away some of my old German knives. This Shun knife cuts quickly and cleanly, and the rounded handle was very comfortable to hold in comparison to the rectangular handle on some other knives.
