Oh boy, just what I needed!
I am not all that big on baking pies, but when invited to someone's home for a pot-luck, I invariably make a Quiche. It's easy, doesn't take too long to bake and gets lots of compliments. But one of the hard parts about bringing Quiche is that it's not always that easy to transport, especially if you're walking instead of driving, which I will do if I bring one to work.
Voila! As if reading my mind, Pyrex has come out with this Portable Pie Plate, and when I saw it offered on Amazon Vine, I had to have it, despite the cutesy alliteration in the product name. As many cooks know, one of the best things to cook pie crust in is a glass dish (especially if the crust is properly prepared), and as glass pie dishes go, Pyrex has a pretty solid reputation. So I really wanted to try this, and I'm glad I did.
The durable plastic cover and base is heavy enough to be dishwasher safe, as is the Pyrex glass dish that inserts into the base. The base is easily removed and is also dishwasher safe; of course, the glass should not be exposed to extremes in temperature variation. The cover locks securely in place, and has both a handle on top, for one-hand carrying ease, plus two side handles, if you'd prefer to transport it that way. The base also has serving guide marks, to assist in easy portion rationing, and holes in the base to allow just enough steam to escape to cut down on moisture buildup. All in all, it's a very thoughtfully designed piece of kitchenware. Highly Recommended.
For anyone so inclined, here's my time-tested recipe for Classic Quiche Lorraine:
4-6 Servings
Preheat oven to 375°
Prepare a 9 Inch pie-shell (or use a pre-formed refrigerated crust) by brushing it with the white of 1 egg, and prick it well with a fork.
Cut ¼ lb. sliced bacon into 1-inch pieces;
Cook the bacon in a skillet, until the fat is almost cooked away, but the bacon is not yet crisp. Drain it on paper towels.
Heat almost to boiling 2 cups milk or cream (I use half & half)
Allow it to cool slightly, and then beat it gently together with:
3 eggs
¼ teaspoon salt
¼ teaspoon white pepper
Sprinkle Ground Fresh Nutmeg
1 teaspoon chopped chives (frozen is fine)
Sprinkle the bacon in the bottom of the pie-shell, along with
½ cup diced Swiss cheese
Pour the egg mixture over the meat and cheese and bake 35 to 40 minutes, or until the top is golden brown. Test for doneness with a toothpick or knife inserted in the center; the Quiche is done when toothpick or knife comes out clean.
Note: This basic Quiche recipe can be used for many types of Quiche - Substitute any cheese, meat or vegetable (or combination thereof) for the Bacon and Swiss cheese (Ham and Cheddar work very well, as does cooked Spinach, Broccoli or Asparagus). For additional variety, try chopped onions or scallions instead of chives.
