Chinese chef's cleavers are somewhat a mistranslation, as they are not true cleavers. It is actually used for as a slicer and chopper. Much like a French chef's knife or a Japanese Santoku bocho, a Chinese chef's cleaver is an all-purpose knife with a medium blade. It is known as "vegetable knife" to Chinese. This is not a thin blade slicer, nor a thick blade meat cleaver. Chinese chef's knife sits between the Chinese slicer and the Chinese cleaver. It is not designed for hacking through big bones, though thin chicken bones are acceptable.
I bought this knife on March 2009. Dexter-Russell Chinese chef's knives are highly regarded among Chinese chefs in America. This particular model S5198 is the best selling of them. Its blade is 8 inch in length and 3.25 inch in width. It spine is 3/32 inch thick, which is 1/32 inch thicker than my previous Sekizo Chinese chef's cleaver. The thicker spine gives the knife a sturdier feel and a heavier chop (some people like this, some don't) The 3-1/4 inch walnut wood handle is nice. A wood handle is warmer to hold and allows a non-slip grip compared to a steel or plastic handle. I oiled the handle with tung oil to prevent it from absorbing too much water. The tang extends 40% into the walnut wood handle and can stand up to 500 pounds of pull. According to customer service, this Dexter-Russell S5198 is constructed out of 420 stainless steel and harden to Rockwell 54-56 HRC. Because normal 420 cannot be harden much above 50 HRC, this knife must be made of 420HC and not the normal 420. 55 HRC is normal for kitchen knives, but soft comparing to hard steel Japanese knives, like Shun or Hattori cutlery. For a given steel, there is a trade-off between strength and toughness. A very hard knife is resistance to low level impact, but will chip/crack when the force is great. A softer and tougher knife tends to give and have its edge roll up easier, but has greater resistance against chipping and cracking. As Chad Ward pointed out, "The most extreme examples of both would be the extremely hard, yet shatter-prone ceramic knives from Kyocera compared to very tough, soft stainless Chinese cleavers". Chinese chef's cleavers often are made out of softer and tougher stainless steel due to their all-purpose function. This is a stamped knife with no bolster, finished with a saber grind profile. I ground mine with a 15o back bevel and a 20o on the edge face. Finally, this knife is made in USA by Dexter-Russell, the largest and oldest American cutlery manufacturer. I rate this Chinese chef's cleaver between a 4-star score and a 5-star score. I am quiet happy with this knife and it is certainly a fine cutlery for its $30-40 price, so it deserves at least a 4-star rating. I am just not sure if it is exceptionally great given its 420HC stainless steel grade is rather common.
I have now moved toward the Chan Chi Kee (CCK) thin blade chef's knife due to its thinness.
*Skip the bottom if you already know how to hold a Chinese cleaver.*
Some of you probably are Chinese cleaver veterans, but for those of you who are not, here are some suggestions for holding a Chinese chef's cleaver. It is a pinch grip just like a French chef's knife. Hold your knife with your dominant hand. Have your thumb and index finger hold on the spine (slightly passed the bolster section), while the other three fingers wrap around the handle. Alternatively, have the thumb, index and middle fingers on the spine, and hold the handle with ring and little fingers. Both grips are acceptable. Hold your foods with your other hand with your fingers tips curl inward, allowing your minor knuckles or your joints exposed. Lean the side of the cleaver blade against your knuckles or your joints and you are good to chop, cut and slice, but never lift the blade edge above the knuckles/joints. In other words, your knuckles/joints will guide your cutting motion and preventing you from cutting yourself. I have uploaded a photo of this in this review.

This is a solid well-made product with holes in the mill inserts that are larger (5mm and 3mm) than the size of the seeds you want to keep out of your sauces. I primarily use a food mill for tomato sauces. This device will not work with tomatoes or seeds noticeably bigger(grapes). Unless you are pureeing watermelon you probably will be disappointed in this product.

This ricer works good for the price.
I like lumpless fluffy mashed potatos & this unit really helps to make that happen,
but I only gave it a 4 star rating because it doesn't process all the product placed in it in one ricing.
Some of the product squeezes between the bucket & the press & doesn't make it through the ricer
which requires it being re-fed, but that's not a deal breaker.

Well, may be it's just my over-expectations :)
Seriously - I am still chopping vegetables manually.
This thing is good to make a mess or puree of anything you have.
You can use it sometimes if you cook for yourself only and don't mind the look of results, although even in this case you will arguably spend more time cleaning the chopper.
So, honestly, you don't want this. Buy a good knife or a grater.

I had bought one of the cast aluminum citrus press a week before and broke it after one day. As I use it mostly for limes and lemons I didn't want a stand type press because it took up too much kitchen counter real estate. So I did a search on the net and came across this one.
First it's stainless steel and built tough,very heavy duty. second it's got a 3" bowl, large enough for the large limes and lemons, but I'm afraid that it's too small for most oranges sold in supermarkets.
I feel that the design could be improved with another roll of holes in the bottom of the press, but other than that it's the best I've come across. Since I've received it, I've had a chance to look in several specialty cooking stores and haven't found one comparable.
**** Update, it's now 8/15/07. I use the press almost every day (my favorite drink is 2 packets of splenda, one fresh lime and a quart of carbonated water over ice). The press is in the same shape it when I bought it. No deformation of the handles (I'm a big guy 6'6" and 325 lbs and I've really squeezed the handles hard), after a pass through the dishwasher it shines like new.
**** Update it's now 11/18/2009. Still using it just about every day and it still looks and works like new.

We bought this thinking it would look better than stainless steel. We love to compost and this pail sure beats keeping a bucket on the counter. However, it is heavy and the handle is poorly made. When you life up the handle it comes off of the clunky clips on the side. This really needs to be redesigned.
We removed the poor handle after the first trip to the compost. The ceramic is not only heavy, but it is also much harder to keep clean that the stainless steel. The ceramic tends to pick up stains which are hard to scrub out. And of course there is always the fear of breaking it.
As long as the filter is kept clean and fresh, the pail emits no odors. Whether you choose stainless steel or ceramic, make sure you buy some extra filters. You'll be happy you did.

I like this grinder.
In the past I've owned the metal grinders that you have to clamp to a table and the electric kind with big motors that take up most of the space on the kitchen counter. They were so clumsy and a pain to clean that I seldom used either one. The electric one failed recently grinding peanuts!! and the old metal manual one got left behind in the last move so I decided to try this Nor-Pro despite it being made partly of plastic.
I was pleasantly surprised at how well it works. You do have to assemble the blades correctly. My first project was meatballs -- it ground the meat(buffalo stew meat in this case), the onions, a little garlic, mint stems and leaves, and the dry bread all very nicely into the square bowl which is included with the grinder. I grind my own meat to avoid the fat and "parts" from supermarket hamburger. The coarse grind is just right for tacos or wonton filling. Cleanup was easy - I put the pieces in the square bowl, added some hot water and a squirt of detergent and it was all clean in a few minutes and ready to use for the next meal. The extra pieces fit into a small plastic ziplock bag along with the basic instructions so they are not likely to get separated or lost. The rectangular bowl is attractive enough and the right size to take to table to serve sushi or gyoza.
The plastic is nice sturdy plastic like that in Lego toys. You do need to have a smooth countertop for the suction to work to stabilize the base(it doesn't work on my butcher-block table). It looks nice sitting on the counter so there it stays and gets used a lot. I only use my blender for smoothies nowadays. Nuts and beans and all sorts of other foods get ground in this little grinder.
One needs to make sure the pasta dough is not too moist... it takes a little practice.
The vegetables and cooked meats typically used for sandwich salads grind very nicely - even celery. So it is great when preparing lunches for brown bag or picnics. It also does a nice job of grinding garlic for garlic bread and/or salad dressing... saves my hands from smelling like garlic forever.
I'm left-handed and it is still easy for me to use.

This is the "stamped" counterpart for "Sam The Cooking Guy Knife". I don't know where Sam went on the TV, but this knife is great. It's lighter than the forged knife, which would be expected, & it does not say anything about Sam on it, but I'm sure it's the same knife associated with "Sam...." It's got full tang, POM handle, and perfect craftmenship.
